So something that you should know is that the little man is allergic to eggs, which makes baked goods kind of complicated. When asked to bring something to any kind of event I always made desserts, it's what I'm good at. However, over the last couple of years baking has become somewhat of a headache where the little man is concerned. I am glad that I only have to worry about eggs, it is easier then what we were originally told (which was pretty much everything).
Anyways, I have tried some egg free chocolate chip cookies in the past. I brought them to our big Thanksgiving gathering last year and the teenage boys demolished them, sadly, the husband wasn't a fan so I've been looking for another recipe ever since. Last weekend I found this lovely recipe that I thought I would try. The problem with other cookies that I tried was that they all required cream cheese or sour cream, neither of which we normally have in the house. These cookies are made with things that everybody should have in their house.
While reading through the recipe I thought it was odd that you added the flour before the "liquids" so I switched it to the way that you normally make cookies..... Turns out that they stay crumbly that way so I added an 1/8th cup of milk to get them to stay together. I split the batch in half and put chocolate chips in half (for the hubby) and mini reese's pieces in the other (for me, since I have the terrible affliction of a chocolate allergy). They turned out great, the only problem 2 days later and all but a couple of the chocolate chips ones are gone :( Apparently 24 isn't enough to fill the void that has come from not getting cookies in 2 years for the little man.
The cookies might not look completely finished when you take them out, but let them sit on the pan for a little bit and they turn out GREAT! The little man learned a new word, "Cookie!"
He tends to shy away from chocolate, but I'm pretty sure thats because when Daddy is gone there isn't any in the house and here recently Daddy has been gone a lot.
